Ingredients:
1 1/2 cups warm mashed sweet potatoes
1/3 cup granulated sugar
4 T melted butter
1 egg, slightly beaten
1/3 cup milk
1/2 tsp vanilla
(cinnamon or nutmeg optional)
Topping:
1/3 cup light brown sugar
1/2 cup pecan pieces
1/4 cup flour
4 T butter, melted
dash salt
Preparation:
Combine mashed sweet potatoes, sugar, butter, egg, milk and vanilla; mix well. Pour into a buttered 1 to 1 1/2 quart casserole dish. Mix light brown sugar, pecans, flour, melted butter or margarine, and salt. Pour over top of potato mixture. Bake at 350 for 20 to 30 minutes.
Serves 4.
